AFTER SPENDING 6 YEARS WORKING IN FRENCH KITCHENS, KIWI WALLACE MUA HAS BEEN ANNOUNCED AS THE EXECUTIVE CHEF AT FISH RESTAURANT AT HILTON AUCKLAND.

After beginning a career in hospitality as a 15-year-old in the housekeeping department at the Hilton, Wallace has perfected his cheffing skills in kitchens both overseas and in his home country and is excited to bring fresh, sustainable produce to diners at FISH.
