What’s your morning routine?
Three double espressos, then on with the day.
What’s the top three things on your bucket list?
Circumnavigating the planet in a sail boat, riding the trans-siberian railway and starting a distillery.
What advice would you give your 20 year-old self?
It’s all going to make even less sense than George W. Bush.
How do you stay motivated?
Making great beers is my primary motivation, and winning medals in this years’ New World Beer & Cider Awards is a good way of keeping score. My team and I work hard to keep making beers that are exceptional not just acceptable.
If you didn’t need money, what would you do?
Start a restaurant that would only be open when I could be bothered cooking.
